Ingredients

For this recipe you will need:

  • Whole wheat sandwich bread, sliced (I like homemade the best!)
  • Eggs
  • Milk
  • Cinnamon
  • Vanilla Extract
  • Olive Oil
  • Butter (optional for topping)
  • Fresh Strawberries
  • Maple Syrup

Where can I get fresh, local, organic strawberries?

Strawberries just started to ripen here in Michigan right around the summer solstice.

I recommend visiting a local u-pick farm to pick your strawberries yourself, this is a super fun activity for kids too!

Or you can go to a local farmers market or farm stand that sells local strawberries.

Try to find strawberries grown using organic and sustainable farming practices for the best quality and taste.

To make this dish year round, freeze fresh strawberries in early summer when they are ready for harvest. Check out my blog post “How to freeze strawberries” to learn how, and enjoy the taste of summer all year!

Simply thaw the strawberries in the fridge for a few hours or out on the counter for a few minutes before making the french toast recipe if you are using frozen strawberries.

French Toast with Fresh Strawberries

A delicious summer breakfast!

Cook Time 15 minutes

Equipment

  • 1 cast iron skillet or any griddle/skillet you like
  • 1 Spatula
  • 1 shallow wide dish to mix eggs
  • 1 Fork or Whisk

Ingredients
  

  • 2 slices Homemade Whole Wheat Sandwich Bread day old bread works best
  • 2 Eggs
  • 2 oz Milk
  • 1/4 tsp Vanilla Extract
  • 1/4 tsp Cinnamon add more or less to your taste
  • olive oil to coat pan
  • 1/2 cup Strawberries, green tops removed and cut into bite sized pieces add more or less to your taste
  • maple syrup or syrup of your choice for topping
  • butter optional, for topping

Instructions
 

  • Preheat the skillet on medium heat and coat the pan with olive oil.
  • Add eggs, milk, cinnamon, and vanilla extract to the shallow bowl and whisk well with fork.
  • Soak bread in the egg mixture in the shallow bowl for a couple minutes on each side.
  • Add bread to the pan and cook for about 10 minutes until golden brown.
  • Flip and cook the other side 2-3 more minutes until golden brown.
  • Remove french toast from pan and top with butter, fresh strawberries, and syrup.
  • Enjoy right away!
