Easy Breakfast Scramble Recipe

Check out this easy breakfast scramble recipe, great to freeze for meal prep and a quick breakfast on the go! This easy to customize recipe is great for vegans, vegetarians or meat lovers!

I’ve been making this recipe in variations for years now. It’s great to pull one out when you are hungry for a warm breakfast but don’t have time to cook. Just warm it up in the microwave for a couple minutes, and have a delicious hot meal ready to go!

You can also freeze the scramble mix inside of a flour tortilla, creating a homemade breakfast burrito! Making these instead of eating store bought breakfast burritos helps you control the ingredients, and avoid preservatives and additives found in some frozen burritos in the store.

I encourage you to choose all local and organic ingredients when possible.

You can swap out different peppers or veggies for what’s available seasonally.

Use vegetarian meat replacements instead of regular meat to make it vegetarian.

If you are vegan you could swap out the egg for tofu or other egg replacement, and use a vegan meat replacement and vegan cheese.

Store the scramble in individual size portions in an airtight container to freeze for meal prep (I like to use the 2 cup Pyrex or Anchor glass cups with lids).

A delicious full hot breakfast made in one skillet, easy to freeze for meal prep, and customize to be vegan or vegetarian!

Ingredients
  

  • 1 Onion, diced
  • Olive Oil to coat pan
  • 3 Small Redskin potatoes, cubed Russet potatoes work well too
  • 1 Green Pepper, diced or any peppers or veggies you like
  • 2 Sausage Links, Cooked Vegan, Vegetarian, or Regular breakfast meat of your choice
  • salt and pepper to taste
  • Shredded Cheese or vegan cheese if you prefer
  • 4 eggs or vegan substitute if you prefer
  • 2 tbsp Milk

Instructions
 

  • Heat oil in skillet, add onions and cook for a few minutes until they start to turn brown.
  • Add potatoes, and salt and pepper to taste.
  • Once potatoes are cooked through, add diced peppers.
  • After the peppers cook a bit, add your cooked breakfast meat.
  • Scramble the eggs with the milk in a bowl.
  • Add eggs to the skillet and cook until eggs are done.
  • Add shredded cheese on top. Season with salt and pepper to taste.
  • Eat it right away! OR
  • Portion out into 2 cup containers, let cool, and freeze to warm up later. When you are ready to eat, just remove a cup, take off the lid, and microwave until warmed through for a hot breakfast in minutes!
